Ayurvedic Beluga lentil Dahl

Ingriedients

2 tspns Black mustard seeds

1/2 tspn cumin seeds

1 tbsn tumeric

2 tbsns ginger

1/3 tspn aesofitita

2 small green chillies

1 handful corriander, himalayan salt *the only salt that can be used daily in ayurvedic standards

3 tbsns ghee

Sugar / ideally monk fruit or xylitol as sugar is aging & not ideal for optimal health.

1 & 1/2 cup Black lentils

Veggies of choice

2 cups chopped tomatoe.


How too..

In a saucepan heat a tbspn of ghee with 2 tspn mustard seeds. Once they are popped divide them and keep one half for the chutney.

In the pan add finely chopped ginger and lighty sautee. Add 1 tbsn Tumeric, 1/2rd of a tspn of cumin seeds and lightly sautee in ghee.

After soaking the lentils in boiling water for 20 mins, add the sauteed spices to a pot with the lentils and boiled water the lentils soaked in.

Cook until the lentils with hard veggies of hoice until all are soft *approx 25 mins.

Add veggies that dont take so long to cook for a few minutes eg brocolli.

Chopped spinach, silverbeat or other leafy greens can also be added to the cooked mix. They will soften in the mix and be el dente also holding more nutrients ♡


For the chutney

Add cubed ginger pieces to the remaining mustard seeds in a pot with 1 tbsn of ghee and pinch of aesophitita. Add 2 cups of finely chopped fresh tomatoes. Add chillie (ammount of choice), 1 & 1/2 cups of water with salt and 2 tspns of sugar. Monk fruit is best. Bring to the boil and then let simmmer for approx 25 mins.

Once dished out, can add some chopped corriander, ghee and chutney.

*This is a formidable vata balancing recipe for the nourishing warming effect. If you have a strong pitta constitution go lightly on the chillies and can add more sweetener to the chutney. You can also add some coconut yoghurt (as pictured), or pure cows yoghurt (from an ahimsa village), which will also assist to calm and balance pitta consitutions.

Serves 1-2 (depends how hungry you are!)

I have a task for you.. not to taste the food before honouring the meal. This way you can make an offering to the divine / creator as if you have made this especially for this intention. Just as when something is purchased from a shop it isn´t tasted first so the customer can enjoy wholeheartedly. Then with a heart felt prayer of gratitude you can make an offering with your mind, and soul. A little secret.. this has even been known to enhance the flavour of the meal which you can enjoy after first offering this to God. This practice can also purify the meal karmically from all of the hands, monetary exchange, & intentions that crossed into the ingriedients prior to being in your hands. It is also a practice of selfessness in devotion.

You can also chant the Maha (Great) Mantra (To free the mind) as part of this devotional meditation to make your meal time sacred in offering.
